Ingredients
2 c. olive oil 30ml extra virgin table
1 onion, peeled and quartered
5 medium carrots, peeled and cut into sticks
3 small red potatoes, peeled and quartered
1 bay leaf
½ c. Tea dried thyme 2 ml
½ c. table herbs 7 ml
6 house 1.5-liter cups chicken broth
pepper taste and dried parsley

Tips
- To give the garden a taste of citrus, add the zest of an orange at the end of cooking.
- You can replace the broth house by a stock trade (in powder, liquid concentrate or canned). In this case, the addition of salt is not necessary.
Preparation
- Heat oil in a pot. Add the onion, reduce heat to low, cover and cook 3 to 4 minutes.
- Add all other ingredients. Bring to a boil, reduce heat to low and simmer 30 minutes. Correct the seasoning at the end of cooking.
- Remove the bay leaf and move to the blender.
- Serve carrot cream accompanied by rye crackers.
