Before starting
A mandolin will make slicing the onions.
A blender or food processor will be very useful to purée the soup puree.
Preparation
Melt the butter in a saucepan over medium heat. Add onion and cook 6-7 minutes, stirring occasionally. Add flour and cook 3 minutes, stirring.
Add broth and bay leaf, bring to a boil, then reduce heat, cover and simmer about 20 minutes, until onions are tender. Add salt and pepper to taste.
Let cool a few minutes, then reduce the soup puree in a food processor until smooth. Pour the soup into bowls, add the grated cheese and serve.
observations
A much faster recipe than the traditional onion soup, but almost as comforting result.
