Turkey Stuffed With Wild Rice And Mushrooms


Ingredients

12 pounds whole turkey, unseasoned 5.5 kg *
1 cup wild rice 250 ml
3 cups water 625 ml
7 ounces chopped mushrooms 200g
8 ounces white mushrooms, sliced 227g
1 large onion, thinly sliced 200 g
2 c. table olive oil 30 ml
1 c. butter tea (optional) 5 ml
2 cloves crushed garlic
½ cup chopped fresh parsley 125 ml
½ cup dried cranberries 125 ml
1 c. Tea Rosemary 5ml
½ c. makers celery seed (or celery powder) 2 ml
1 pinch cloves
1 pinch cinnamon
1 pinch nutmeg
salt and pepper to taste
* The turkey called "seasoned" is generally injected butter or, more often, margarine

Tips


  • To thaw a turkey in the refrigerator (the preferred method), allow 24 hours for poultry 3 kg and add an additional 2 kg per day. For Turkey 5.5 kilograms provided for in this recipe, it is necessary to provide a little more than two days.
  • It is also possible to thaw the turkey in cold water at a rate of one hour per kg. Place the chicken in a plastic bag. Changing the water every 30 minutes to maintain the very cold. It is not recommended to thaw poultry on the counter, as bacteria grow very quickly.
  • The turkey carcass can prepare excellent broths. Simply place it in a pot large enough to cover the carcass with water and add a coarsely chopped onion, celery leaves, a few carrot slices, a few bay leaves, herbs and salt and pepper to taste. Allow to simmer for at least 1 hour over low heat and filter. Freeze quickly if it is not anticipated immediate use.
  • You can use the broth which is at the bottom of the roasting pan as tasty sauce. Remove the fat that is on the surface with a spoon to be more "health".
  • Serve this turkey colorful vegetables steamed and crisp (asparagus, zucchini, broccoli, etc.) and a starchy food. Why not try mashed sweet potatoes instead of the traditional mashed potatoes?
  • Many fond cranberry sauce to accompany turkey. Preparation

Note: To prepare this recipe, the turkey should be completely thawed (see Tips) stuffed just before cooking.
Cook the wild rice in water (about 40 minutes). Book.
In a large skillet, sauté onion 1-2 minutes in oil and butter, add garlic, oyster and white mushrooms and cook, stirring from time to time still 2-3 minutes. Remove from heat and pour into a large bowl.
Add cooked wild rice and other stuffing ingredients. Keep this mixture in the refrigerator until ready to cook the turkey; do stuff at the last moment to avoid the multiplication of bacteria. The turkey should be completely thawed before being stuffed.
Cook the turkey (turkey for 10 to 12 pounds) at 165 ° C (325 ° F) for 4 hours to 5 hours, or until the meat thermometer 82 ° C (180 ° F). For turkey is juicy, put a little water in the drip pan (or chicken broth for example), too often avoid opening the oven door (it lost heat and increases the cooking time) and watered two or three times during the last hour.
